This month started really strong food wise. Technically I started this on Thursday 1st, so not a full week, but I want the coming weeks to start on a Monday lol. I had quite a few really good vegan meals, some I made at home and some I had out and about.
I made sure to check out the supermarkets for their vegan ranges but I did realise that not many places advertise Veganuary anymore which sucks! Aldi had probably the best range, I tried their bean chilli microwave pots which are very nice as a lunch option. A lot of their sweets are vegan too which was also nice as vegan sweets can be a pain to find.
Tofu was the main ingredient I tried this week, I haven’t had a lot of tofu before as I thought the texture is a bit weird but I’m really surprised at how versatile it is. I had satay tofu in a chinese takeaway, fried tofu in a thai restaurant and it probably snuck into other meals I had, but I really enjoyed them all!
Overall, lots of good finds to start a new life of being vegan 🌱
